Gluten-Free French Toast with Salsa and Relish

One of our favourite breakfast dishes is the classic French toast, but more often than not it’s heavy and greasy rather than the fulfilling breakfast we need. Chōsen Chef Josh has the answer, and puts a unique twist on the traditional dish with this simple recipe: gluten-free and packed with nutrients, this French toast is lighter but just as satisfying, and is sure to energise you for the day ahead. This delicious recipe makes five portions, but we won’t judge if you want a little bit extra for your Sunday brunch.


French Toast

  • 10 slices of gluten-free bread
  • 15 eggs
  • 1 pinch salt
  • 1 pinch pepper
  • 10g Butter, cut into 1cm cubes

Papaya and Pineapple Salsa

  • ½ large ripe red papaya
  • 1 small ripe pineapple
  • 100ml maple syrup
  • Juice of 2 limes
  • 1 cup almonds
  • ½ cup coconut chips

Spiced Zucchini and Red Pepper Relish

  • 1 large green zucchini
  • 2 red peppers
  • 2 tsp crushed garlic
  • 3 shallots
  • 1 punnet cherry tomatoes
  • 1 tsp coconut palm sugar
  • 1 pinch salt
  • 1 pinch pepper
  • 50 ml olive oil

Method:French Toast Prepare the eggs as if you are making scrambled eggs: crack into a mixing bowl and whisk for 2 minutes.Heat up a frying pan, large enough so that you can fit 2 pieces of bread side-by- side.Chop the butter into 1cm cubes and in the hot frying pan, add one cube of butter.Once melted, add a ¼ cup of egg mix and lay 2 pieces of bread on top. Then, add another ¼ cup of egg over the top of the bread.Season with a small pinch of salt and pepper.Once the egg is almost cooked, flip the bread over. Season again and cook for 1 minute.Remove the toast from heat and place on a baking tray. Now repeat the process until all the portions are done.Place the French toast in a hot oven for 2 minutes to serve warm.SalsaPeel, prep and de-seed/core the papaya and pineapple before chopping into 1cm cubes.Toast the almonds and roughly chop the almonds and coconut chips.Combine all of the ingredients in a bowl, chill, and serve beside the French toast.RelishWash and dry the zucchini and red pepper before chopping into 1cm cubes.Wash and dry the cherry tomatoes before cutting in half and thinly slice the shallots.Combine all of the ingredients in a bowl and serve beside the French toast. Enjoy!
